  • 1095HC is a simple but powerful steel. Its known for its toughness and ability to take a extraordinary edge. Chefs love it because its super easy to sharpen. This means you will spend less time fiddling with the edge and more time doing work.

  • Koa is a tree that grows on the islands of Hawaii. It thrives in soil that has volcanic ash. This wood is highly sought after due to its curls and waves that shift in the light. The Koa on this Sujihiki is exceptionally unique because it has curls going in two different directions, making a X pattern.

  • K&G have over 20 years in stabilizing and are known to be the best.

  • The stabilizing process almost turns wood into a plastic. The wood is put under full vacuum in till all the air has been pulled out of the wood. Then its pressurized while submerged in resin. This pushes the resin into all the empty space inside the wood. The resin is then cured. This makes the wood very resistant to warping and water damage.
