Yanagiba knives are traditional Japanese blades used for slicing fish and preparing sushi or sashimi. Their long, single bevel edge makes clean precise cuts in one stroke. Which keeps delicate ingredients intact.
This has a complex hollow grind. It’s three different hollows ground into the blade then blended together. This traditional hollow makes the Yanagiba have a longer life and better cutting power with less resistance.
